Yum! This weeks meals have been so full of flavor. Cooking this weekend I used almost my entire arsenal for cooking! Crock pot, air fryer, oven, stove…everything but the pressure cooker! I’ve been making four dishes on Sunday instead of two which has been challenging and tiring BUT I’m finding it even easier to stay on track during the week because of the variety. In the end, an extra hour of work on Sunday is well worth it for staying the course during the week. So today, I’ll recap two of the four, Cauliflower Rice Taco Skillet and Slow Cooker Buffalo Chicken Lettuce Wraps. One pot meals=winning!
Cauliflower Rice Taco Skillet–I love to do Mexican inspired dishes for meal prep because they always seem like a little bit of a cheat, so full of flavor and indulgent! This meal DID NOT disappoint! As I was preparing this dish I honestly thought to myself “this is going to be a staple, it’s too easy not to make often”! You honestly just heat a skillet, pour stuff in, mix it up and your done! I made sure to top mine with shredded lettuce, plain greek yogurt and homemade, chunky salsa. Doesn’t it look too pretty to eat?! And please, don’t ruin this with cheese. You don’t need it. I promise. I love cheese. I think next time I might add corn to this mix to add a different texture!
Home made salsa is super simple: One container cherub tomatoes quartered, 1/2 a purple onion diced, 1 jalepeno diced, 1/2 tsp of minced garlic, salt and pepper and the juice of one lime.
Slow Cooker Buffalo Chicken Lettuce Wraps–This was a hit with myself and my hubby! I love finding new crock pot meals! I used to always do crockpot meals while I was at work but the meat always got a little mushy from cooking all day. I would have to do low for 8 hours and it just ended up being kind of blah. I have found that if I do higher heat for a lower time frame it turns our much better. I mixed in a tad bit of greek yogurt to make it a little creamy right before eating and yall it was so yummy! The portions are a great size also. I split this into three servings which made 2 wraps each. Very filling and satisfying plus a crock pot meal means this will become a staple as well!
So that’s this weeks recap! I’m excited to finish out this week and weigh at the beginning of next week. This is the final week of the four week meal plan group I started! That means next week I’ll chat with all those participants and hear the good and the bad. I honestly don’t know which I’m looking forward to?! I wanna hear the good but I also want to hear the bad so I know what works and doesn’t work for you guys! Which meals hit the spot, which meals fell flat? What meals require too much effort? What meals helped you stay excited about what you prepped? ALL THE THINGS. I’m ready to hear all the things!
