Recipe Recap–Easy Chicken Salad

Finally, a new recipe to share!  I don’t have tons of pictures and honestly it doesn’t take much explanation so this should be short and sweet!  I stumbled across this recipe on the Instagram of a new account I’ve been following, @samanne.fit, and I knew I needed to try it out.

Easy Chicken Salad

  • 24oz chicken (I used canned, in water)
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1 cup plain, nonfat Greek Yogurt
  • 1/2 cup chopped walnuts and dried cranberries
  • salt and pepper-to taste
  • FlavorGod Garlic Lovers-to taste

Mix everything together and divide into 5 servings.  (nutritional info: 12g carbs, 5g fat, 30g protein=191 calories)

In the original recipe she used 1/2 lite mayonnaise and 1/2 nonfat Greek yogurt.  If you have trouble with the “twang” of Greek yogurt that might be a good option for you but I think it tastes great only using the yogurt.
